Unusual coffee-rubbed ribs braai recipe

Do you just love coffee? Most people do. In fact, coffee is one of the most accepted addictions out there! People love their coffee to wake them up in the morning, to sip on it while catching up with a friend, to help them through a long night of working, and in their ribs. Oh, did that last part sound weird to you? Let me tell you, it won’t anymore. This Heritage Day you can incorporate coffee into your Braai routine!

Here you have a recipe for ribs with a fun twist to it: they are seasoned with coffee. We prepare a rub with coffee and other flavorful ingredients like cocoa and chili powder, to lift up your taste buds. Now you can enjoy everyone’s favorite drink in rib form too and have a delicious and intriguing meal for your guests.

Ingredients

For the coffee rub:

  • 2 tablespoons of ground coffee (we recommend Organic coffee beans, freshly ground)
  • 1 tablespoon Brown sugar
  • ½ tablespoon Cocoa powder
  • 1 tablespoon Chili powder
  • 1 tablespoon Onion powder
  • 1 tablespoon Garlic powder
  • 1 tablespoon Oregano
  • ½ tablespoon Coriander
  • 2 tablespoons Paprika
  • 2 tablespoons salt (we like Oryx Desert Salt)
  • 1 tablespoon Pepper

The ribs:

  • 2 racks
  • Fire: Indirect
  • Low grill heat
  • Optional: Barbecue sauce

Directions

  1. We’ll start with the rub! Take a small bowl and mix together all the dry ingredients: coffee, brown sugar, cocoa powder, chili powder, onion powder, garlic powder, oregano, coriander, paprika, salt, and pepper.
  2. Now it’s time to prepare the ribs. Take the rack and remove the membrane on the back, then trim the ribs.
  3. Next, rub every rib with the rub (quite a tongue twister, isn’t it?) we prepared previously. We advise you to store the ribs overnight in the fridge to get them to really take in the flavor of the rub. This is optional, you can totally cook them right away.
  4. Prepare the kettle braai/Weber by firing it up to 107°C. Once you reach this temperature, add some chunks of smoking wood.
  5. Once the wood starts producing smoke, it’s time to cook the ribs. Place the ribs with the meat side up on the braai, and smoke for about 5 to 6 hours until they start to bend slightly. If you’d like to use some sauce, brush it over the ribs and wait until it caramelizes, which will take up to 20 minutes.
  6. Remove the ribs from the braai once they’re done, slice, and serve your delicious and unique coffee-rubbed ribs!
